January 25, 2016 – AUSTIN – The second beer from Oddwood Ales, a side project of Adelbert’s Brewery’s Taylor Ziebarth, is set to release February 1. Oddwood Ales is focused on producing small batches of barrel influenced wild ales. Their beers are produced and packaged at Adelbert’s Brewery in Austin, Texas.
Oddwood’s second release, Taming of the Savage Heart, is a blend of young and mature barrel fermented sour beer. It is the result of a very complex multi-month fermentation using a blend of wild and domesticated cultures. The result provides notes of pineapple, damp oak, and balanced acidity throughout the beer.
Taylor added, “As a nod to lambic producers, we incorporated some aged hops and unmalted wheat into the recipe. Also keeping with their traditions, the beer was fermented and aged entirely in used oak wine barrels. We are very pleased with the outcome of this blend.”
Oddwood’s Taming of the Savage Heart will begin shipping across Texas in early February. Following shortly on its heels will be a release of Oddwood Saison in April. Oddwood is only available in Texas for the time being and will be sold alongside Adelbert’s ales.
