Due South Employee Spotlight - via Due South Brewing

We’d like you to get to know John. He has been brewing at Due South since January 2015.

What is your education & brewing background?
I hold a bachelors degree in Biomedical Engineering from Purdue University, as well as an International Diploma in Brewing Technology from Siebel Institute Chicago/Doemens Academy Munich.
You moved from Chicago to Lake Worth for this job at Due South. How did that happen?
After a dismal winter in the cold of Chicago, my wife asked me to look for jobs in warmer climates. Her family spends time in West Palm during the year and I thought it would be a great idea to look for jobs around the area. Mike and I emailed back and forth for a few months and we finally found time for me to come down and brew with the team.
How do you think Due South has changed since you arrived?
Part of what draws me to Due South is the fact that we are in a phase of rapid growth. The amount of beer between a small brewery and a medium sized one can be a lot, along with improving quality control. I like how we have added new equipment (tanks, new bottler, walk-in) and procedures (yeast control, better clarification) to try to continue to make the best beer we can.
What is your favorite/least favorite part about being a brewer?
My favorite part of being a brewer is the fact that I am doing something that I am passionate about and that I get to make a product that people enjoy. My least favorite part is the humidity, but the joys vastly outweigh the weather.
What is your favorite Due South beer and why?
Mexican Standoff, because the flavors are amazing.
